I have a new favorite recipe. These Banana Oat Bars are amazing and so healthy and simple to prepare. An added bonus is that it makes the perfect snack for kids OR breakfast on-the-go. This one is definitely a keeper.
A few weeks ago a friend brought over dinner and a plate of these bars. What a blessing meals have been during this newborn stage. As for the bars, I didn’t know whether to eat them for dessert or for breakfast the next day–so I did both. I couldn’t put them down! Our boys loved their (super healthy, sugar-free) “special treat”. I knew I had to get the recipe.
They’re now pretty much a staple food in our home. They’re a great way to use up ripe bananas and are very adaptable. You can tweak the recipe based on what you have in your kitchen. They’re also egg-free and flour-free.
And of course, you can freeze them! I make about 24 bars at a time, so I put half in the fridge and freeze the other half. If I’m ever running late and need a simple, on-the-go breakfast for the boys, all I have to do is take a couple bars out of the freezer and microwave them for about 30 seconds.
The recipe couldn’t be more simple. First mash the bananas until they’re mostly smooth. Then add in the rest of the ingredients except for the oats and raisins. Mix together until well blended. Then add the oats and raisins. You can also add nuts, chocolate chips (if you’re going for a dessert), or any other fruit/nut mix-in.
Spray 9×13 baking dish with cooking spray. Spread mixture evenly in dish. Bake at 350 for 25 minutes.
Allow to cool completely. Cut small squares of wax paper and fold around each individual bar. Place all bars in a freezer zip-loc bag. When ready to eat, remove the wax paper, wrap in a paper towel, and heat in the microwave for 30 seconds.

- 5 bananas, mashed
- ⅓ cup coconut oil
- 1½ teaspoon flax seed meal
- ⅓ cup coconut flakes
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- ⅓ cup milk
- ½ tablespoon brewer's yeast (opt.)
- 2½ cups oats
- ⅔ cup raisins
- Preheat oven to 350
- Spray 9x13 baking dish with cooking spray
- In large bowl, mash bananas until smooth
- Add the rest of the ingredients except oats and raisins
- MIx together well
- Add oats and raisins
- Spread mixture evenly onto bottom of pan
- Bake for 25 minutes or until toothpick comes out clean
