We’re officially on baby watch here in the Cushman home. Baby boy can come any day now (although he isn’t due until the 29th). The doctor thinks this might be my first baby to come a little early, but I have my doubts.
Until he makes his debut, I’m just going to plug away at freezer cooking and carry on with the waiting game that is the last month of pregnancy.
Somewhere in the process, I managed to try out a new recipe–cheesy turkey noodle bake. And I have to tell you–it was pretty amazing. My sister was over and she gave rave reviews (which is affirmation for me because she’s basically a real-life foodie). This recipe is comfort food at its finest. And it happens to be extremely easy to prepare–because you know I wouldn’t share it with you unless it was easy and tasted really, really good!
While you’re browning and simmering your ground turkey mixture (or you can also use beef but ground turkey has been way cheaper lately where I live), you will simultaneously boil your noodles and prepare your creamy mixture.
I’d recommend cooking the noodles just a tad less than al dente, so maybe 1-2 minutes less than what it says on the package. They’ll continue to cook in the oven.
When the noodles are done, drain them and mix them into the sour cream/cottage cheese until they’re evenly coated. Then you’re ready to assemble.
This recipe can be made all at once using a 9×13 baking dish OR you can bake half and freeze half OR you can bake half and refrigerate the other half for later in the week (I wouldn’t wait longer than 3-4 days to bake the other half). In my case, I baked half for my family and dropped off the other half to a friend who just had a baby. I was happy with how far it stretched.
First, spray your baking dish with cooking spray. Then layer: half the noodle mixture, half the meat mixture, and half the shredded cheese. Then repeat. Then your’e done!
To bake right away: bake at 350 degrees for 20-25 minutes.
To freeze: cover tightly with foil and freeze; thaw overnight in fridge and bake at 350 until heated through.

- 1 lb. ground turkey
- 1 package (12 oz.) egg noodles
- 1 15 oz. can tomato sauce
- ½ cup diced onions
- ½ t salt
- ½ t garlic powder
- ¼ t pepper
- ¾ cup sour cream
- 16 oz. cottage cheese
- 2 cups shredded cheese (any blend--I used half cheddar/half mozzarella)
- Preheat oven to 350
- Brown turkey w/onions; when no longer pink, drain fat
- Add seasoning and tomato sauce and simmer for 5-10 min
- Cook noodles until slightly less than al dente; drain
- Mix together sour cream and cottage cheese
- Add noodles until coated evenly
- Spray baking dish with cooking spray (1 9x13 or 2 8x8)
- Layer: half the noodles, half the meat, half the cheese
- Bake at 350 for 20-25 min
