I love sharing recipes like this one because I sort of feel like I discovered a hidden treasure and I can’t wait for you to try it so you can love it as much as I do. These are seriously the easiest cookies you will ever make.
And actually how I stumbled upon this recipe is a pretty funny story.
A few weeks ago on a Friday night I had put the kids to bed and was relaxing–watching a show on Netflix, scrolling through facebook on my phone–when I saw in my newsfeed someone had posted a picture of a cookie recipe. What caught my eye was that it only called for 4 ingredients.
I realized that I actually had all the ingredients on hand, so in a whirl of inspiration, I got my batch of cookies in the oven at 9:30 p.m. Who bakes cookies at 9:30 p.m. on a Friday night? Apparently I do. But these cookies were worth every bit of effort (it took about 3 minutes to prep).
They could not be any easier to make, and I don’t feel guilty eating them for breakfast. Or giving them to my kids for breakfast. Cookies all day long!
The original recipe called for 4 ingredients, but I added one: ground flax seed. These making great snacks for nursing mamas and that ingredient is supposed to help with milk supply (or so I’ve heard).
- 2 overripe bananas, mashed
- 1 cup quick oats
- ¼ cup chocolate chips
- 2 heaping tablespoons of natural peanut butter
- 2 t flax seed meal
- Preheat oven to 350 degrees
- Mash bananas
- Mix all ingredients together
- Spoon only ungreased cookie sheet
- Bake 15 minutes
